Butter chicken began as a way to save leftovers

In the 1950s, a restaurant owner in Delhi needed a way to salvage leftover, totally dried-out tandoori chicken pieces. He tossed them into a rich, heavily buttered tomato and cream sauce, instantly creating an iconic, wildly indulgent global comfort food.
