Honey's incredible longevity is due to its extremely low moisture content and highly acidic pH, creating an incredibly hostile environment for bacteria and microorganisms. Bees essentially vomit up a biological preservative that outlasts human empires, bronze age collapses, and multiple ice ages. You can buy a jar of organic honey, forget about it in the back of your pantry until the next millennium, and it will still be perfectly fine to spread on toast. It is deeply humbling to realize that the regurgitated nectar from a fuzzy flying insect is structurally more stable than most modern infrastructure, human relationships, and the entire crypto market combined
