Henri Dutrochet discovered osmosis, the fundamental process keeping every cell in your body from exploding, by shoving alcohol into pig bladders and watching them inflate in water. He was the first to realize that plants don't just stand upright by magic; they use the hydraulic pressure of water desperately trying to dilute the salts inside their cells. Yet, history mostly forgot him, preferring to credit guys who named things rather than the guy who figured out how life actually functions.
