Light waves normally vibrate in every direction, but if you filter them, they become highly organized straight lines. Polarimeters shoot this polarized light through chemicals to see if the molecules twist the light to the left or right. It is a bizarrely specific test to see if your sugar molecules are chiral or just lazy.
