The app economy successfully convinced us that eating food cooked in a windowless industrial park is a premium dining experience. Uber co-founder Travis Kalanick pioneered the ghost kitchen craze, buying up cheap, entirely undesirable real estate to house dozens of delivery-only restaurant brands crammed into single facilities. It effectively turned cooking into a pure logistics operation, stripping away dining rooms, waitstaff, and any soul the restaurant industry had left.
