Australia’s national cake was allegedly invented entirely by accident to salvage stale baked goods. A classic lamington consists of a hopelessly dry square of old sponge cake that is aggressively dunked in thin chocolate icing and heavily rolled in desiccated coconut. It’s an incredibly messy, sugary brick that pairs perfectly with a bitter cup of tea.
