How one apple can ripen the fruit around it

One bad apple does, in fact, spoil the whole bunch, and it does so via chemical warfare. Apples continuously exhale ethylene gas, a natural plant hormone that triggers cellular breakdown and sweetening in surrounding fruits. If you trap a banana in a paper bag with an apple, the banana will practically liquefy from the aggressive ripening fumes.
