Garlic gets its bite when you crush it
An untouched garlic clove does not actually smell pungent. The intense aroma only occurs when you physically damage the cellular walls, causing two separate internal compounds to aggressively mix. This produces allicin, a defensive botanical weapon meant to severely punish anything trying to eat it. We simply call it flavor.
