Genghis Khan's terrifying cavalry rarely stopped for breaks, so they would stash raw cuts of horse or mutton between their leather saddles and the horse's sweating back. A day of aggressive riding would mash the meat into a tender, salty, extremely sweaty patty, which they would just eat raw. A true culinary nightmare.
