Beta-carotene is the vibrant pigment that gives the vegetable its color, and when you eat too much of it, the excess compound bypasses your liver and begins accumulating directly in your epidermal layer. It is a completely harmless condition that resolves itself once you stop grazing on root vegetables like an unsupervised rabbit with a grocery store gift card.
