Raw milk is effectively a bacterial roulette wheel. To fix this, dairy processors violently heat the milk to around 161 degrees Fahrenheit for exactly fifteen seconds, then aggressively flash-cool it. This highly calculated thermal shock slaughters the vast majority of terrifying pathogens without actually cooking the milk into a weird, solid dairy stew.
