How an electric kettle knows to switch off
An electric kettle does not possess a brain to know when water is boiling. Instead, it relies on a purely mechanical bimetallic strip hiding in the handle. Once the water violently boils, hot steam travels down a hidden tube, hitting the metal strip. Because it is made of two different metals, it curls as it heats, physically snapping the electrical circuit off.
