Siphons drag water up hills using atmospheric pressure

HERE’S THE INTERESTING PART

Emptying a fish tank requires convincing water to essentially climb a hill. By filling a bent tube and letting the long end hang down lower than the source, gravity pulls the fluid aggressively out of the bottom. This creates a tiny low-pressure void at the top of the bend, prompting the immense weight of the Earth's atmosphere to violently shove more water up the tube to replace it.
