Your favorite childhood sandwich filling started as highly aggressive medical nutrition. In the 1890s, physician John Harvey Kellogg desperately needed a heavily protein-rich, highly nutritious food source for his elderly patients who had completely lost their teeth and couldn't chew actual meat. He aggressively boiled down raw peanuts into a thick, heavily nutritious paste, entirely unaware he was basically birthing the greatest lunch food ever.
